Olive oil and Tuscany belong together like Romeo and Juliet ... no Tuscan dish without olive oil, be it for cooking or as the one and only finish for a Tuscan dish, no matter if it is a salad, a grilled or cooked dish. Beside our Toscanolio oil we have oil from the Monti Pisani of all quality levels from extra virgin upwards.
Wine from Tuscany is famous and available everywhere in the world ... that is valid for the big wines like Chianti Classico, Vino Nobile di Montepulciano and Brunello. But we have in Tuscany beside those also less known excellent day-to-day wines and wine jewels ... and the Toscanolio mission is to detect and offer them to our customers.
Where there is an excellent wine, there is also an excellent grappa. However, in Toscany there are also other alcool specialities ... limoncello and other fruit liquors, bitters based on the herbes of the mountains, the ponce which accompagnies perfectly the italian coffee and rarities like gin and sambuca of the Monti Pisani.
Salami, ham and other meat products belong to the Tuscan kitchen like the crostini and the Pecorino cheese. In Tuscany, there are many small family-owned companies that produce unforgettable specialities like wild boar salami, salami with truffles, red wine or fennel, bacon and ham, the Prosciutto Toscano DOP. In the mountains in the north of Tuscany where there are no more wine grapes or olives, farmers do livestock farming and produce milk and milk products. They produce excellent cheese, the Caciotta from cow milk and the Pecorino from sheep milk - both cheses flavoured for example with pepper or truffles.
What is a Tuscan dinner without crostini as part of the starters. From aromated mayonaise over creams of vegetables, the classical crostino toscano made from liver and hearts of the chicken to a variety of tomato sauces with meat, the Chianina beef or the Cinta Senese ... all very tasty and most to be used as sauce with pasta.
Hand-made pasta produced based on old recipes by a family in the south of the Pisa province, a real "slow" production using highest-quality ingredients, semolina flour processed with cold water to avoid deteriorating the quality and the pasta dried at low temperatures, homogeneous ventilation and controlled humidity. This pasta is the right basis for pasta dishes that let us feel as on vacation. In the south-west of Tuscany you can find at the coast the Maremma, formerly marshland, often malarial, which was drained by order of Fernando de' Medici. From an agriculture point of view, the Maremma is today very rich. One of the typical products from here is rice - rice for wonderful risottos as well as rice for salads and pilafs.
Last, but not least ... we offer to our customers some other specialities that remind you of impressive vacation in Tuscany. For example the famous chestnut flour of Garfagnana, vinegar of Tuscan wine and fruits, honey from the Pisani mountains and coffee rosted in our home town Buti.
